Healthy Recipes for Runners: Meet The Kitchen Vixen

We are excited to announce that Elizabeth Brown, aka “The Kitchen Vixen,” will be providing the WalkJogRun community with weekly healthy recipes!

Meet Elizabeth

  • Certified Diabetes Educator
  • Certified Weight Management Specialist

Elizabeth attended Penn State University where she earned a Bachelors of Science in Nutrition. She later attended Marywood University for her Masters of Science in Nutrition. After Elizabeth earned her RD license, she completed over 2,000 supervised hours in counseling diabetic patients to earn her Diabetes Educator certification. She studied even more to pass an exam for her Weight Management Specialist credential. She attended The Bauman School for Holistic Nutrition to earn her holistic chef certification. There are only three schools in the entire U.S. that offer this program. As you can see, she has a long list of credentials, and we're so excited for her to share her expertise with us!

Elizabeth has over 20 years of professional experience from private counseling to personal training and even working as a private chef for the rich and famous of Malibu, CA.

She is out to save the world, one recipe at a time. Armed with a blender, a spatula, and a good, sharp chef's knife, Elizabeth creates recipes for the masses. Recipes which give optimal energy while fighting off disease.

Elizabeth has always loved to cook, to fuel her body with the best energy sources that she can create. Elizabeth's goal is, and has always been, to motivate and educate the public about the health benefits of optimal nutrition and daily physical activity. Whether conducting television interviews, cooking demos, group lectures, one-on-one counseling or personal training, or helping people make ideal choices in the grocery store, she strives to achieve her goal each and every day.

Healthy Recipes for Runners

As someone who couldn't run the mile in high school, turned exuberant runner as an adult (who gets more thrill out of a new pair of running shoes than almost anything else) , Elizabeth is so excited to help other new, and seasoned runners, incorporate energy enhancing recipes into their diets. From pre run snacks to post run meals, homemade sports drinks, energy bars and everyday meals-on-the-go for busy athletes, she's got you covered. Just follow her lead and you'll feel energized as you head out for a jog, off to your job, or off to the races. Let's GO!
