Peanut Curry Soup

What's on the menu this week? Our fabulous recipe contributor, The Kitchen Vixen, just posted a delicious peanut curry soup recipe. Ingredients

  • 1/2 cup water
  • 2 Tbsp soy sauce
  • 1 onion, chopped
  • 2 small sweet potatoes, diced (2 cups)
  • 1 large carrot, cut into half moons
  • 1 celery stalk, thinly sliced
  • 1/2 red bell pepper, diced
  • 1 pound small shrimp, cleaned and deveined
  • 1 (15oz.) can crushed tomatoes
  • 32 fluid ounces vegetable stock
  • 1 (15oz.) can garbanzo beans
  • 1/2 cup chopped fresh cilantro
  • 3 Tbsp peanut butter
  • 1/3 cup water
  • 2 tsp curry powder

Directions:

  1. Heat 1/2 cup water and soy sauce in a large pot
  2. Add onion and sweet potatoes
  3. Cook 5 minutes over high heat stirring occasionally
  4. Add carrot, celery and pepper
  5. Cover and cook 3 minutes stirring occasionally
  6. Add shrimp and cook until white, about 5 minutes
  7. Stir in tomatoes, stock, garbanzo beans and cilantro
  8. Blend peanut butter with 1/3 cup water and curry powder. Add to soup
  9. Stir to mix. Cover and simmer 10 minutes
