Recipe: healthy (and quick) summer dessert parfait

summer-parfaitIf you’re watching your weight this summer — or just trying to keep healthy — this strawberry, blueberry, and banana summer parfait is a delicious dessert that only takes minutes to make. Perfect for any 4th of July party!

Ingredients (makes about 6 desserts)

  • 1 pint strawberries
  • 3 bananas
  • 1 package blueberries
  • Cool Whip (sugar free)
  • 2 packages instant fat free pudding (1 vanilla, 1 white chocolate)
  • Skim milk (for pudding)
  • 6 glasses (or any container to hold the dessert — wine glasses are a great option!)

Prep work

  • Make the pudding and place in fridge to chill
  • Wash and slice the strawberries
  • Slice the bananas
  • Wash and de-stem the blueberries


  1. Once the pudding is set and ready (about 5 minutes) , line up the glasses to fill with ingredients.
  2. Start with a small amount of bananas in each glass, then layer a large spoonful of pudding on top.
  3. Add a layer of strawberries and blueberries.
  4. Continue layering of fruit and pudding until you run out of room in the glass.
  5. Add the cool whip on top and sprinkle with blueberries.  (this should be done right before serving so the Cool Whip doesn’t slide off the dessert).
