Vegetable spotlight: broccoli


Like most kids, when I was younger I absolutely hated broccoli along with most other vegetables. Funny that I’m now a vegetarian and can’t get enough of even the most exotic vegetables. Since I’m living in a relatively tight budget, I’ve learned out of necessity to identify the least expensive fruits and veggies at the grocery store. Broccoli, my friends, is one of the best bangs for your buck.

If you’re looking to clean up your act, look no further. The phytonutrients found in broccoli help aid the body’s detoxification system. And that goes for all cruciferous veggies (including cauliflower, kale, cabbage, bok choy, etc.). Broccoli is also rich in vitamin C, which is a nutrient in demand this time of year for all populations, athletic or not. When either steamed or raw, broccoli has even been shown to lower cholesterol, an added benefit for your cardiovascular system.

One of the fastest, easiest and healthiest ways to prepare broccoli is simple steaming. You can even do it in your microwave. Just quarter or otherwise chop florets and place in a microwave safe dish with a few tablespoons of water. Cover (try to avoid plastic wrap) and cook on HIGH for 3-4 minutes.
