Vegetable spotlight: kale

kale-the-super-foodWhen I was growing up, we didn’t eat many exotic vegetables. And the term exotic was certainly a relative one which encompassed even basic staples I’ve grown to love, like kale. I don’t go a single week without dropping a bag or bunch of kale into our grocery cart. My favorite variety is dinosaur (or Tuscan) kale for its strong, hearty texture.

I’m sure you’ve noticed kale is pretty much everywhere these days. It has gained popularity in the health conscious and athlete world for its concentration in antioxidant vitamins A, C, and K. For vegetarians and vegans specifically, kale is surprisingly rich in iron. And one cup boasts nearly 20 percent of the daily recommended fiber intake.

Want a healthy, but quick way to enjoy kale? Simply saute!

Heat a few tablespoons of olive oil in a large pan over medium-high heat and add in 1-2 cloves minced garlic. Cook until soft, then crank heat to high. Add kale and 1/4 to 1/2 cup water or vegetable stock, cover, and cook 5-7 minutes. Remove cover and cook until all liquid is gone, then season with salt, pepper, and lemon juice.
