10 healthy breakfast cookie recipes for runnersYes. You read the title right. Breakfast cookies can be healthy, nutritious, and delicious at the same time.

Here are 10 amazing breakfast cookie recipes you can make now for healthy morning munching later.

  1. Gluten Free Cranberry: These Cranberry Harvest Breakfast Cookies are gluten-free and delicious. Combine rolled oats, coconut flakes, flax meal, almonds, cranberries, bananas, honey, and more. You’re starting to see the full picture of the nutrition in these guys.
  2. Pumpkin Spice: Start your day with pumpkin puree. Or these Pumpkin Spice Breakfast Cookies. I love the chunky texture with all the cranberries, pumpkin seeds, and oats. Lots of nutritious stuff disguised as a real treat.
  3. Carrot Cake: The secret to these Carrot Cake Breakfast Cookies is a jar of strained carrot baby food. Of course, you can easily steam and puree your own carrots by cleaning the vegetable, placing in a steamer over a pot of boiling water, and cooking around 20 minutes (until tender). Then blend in your food processor until smooth.
  4. Chocolate Chip: These Chocolate Chip Breakfast Cookies are made with whole wheat flour. My favorite part? The shredded apple hidden inside. If you’d like to make this recipe egg-less, use 1 tablespoon of ground flax meal mixed with three tablespoons of water water as a flax “egg” (same goes with any of the rest of these recipes).
  5. Gluten Free Blueberry: Check out these Blueberry Breakfast Cookies. It’s another wonderful gluten-free recipe using quinoa flakes, rice flour, and tapioca flour as a base. The natural sweetener is honey, but you can easily substitute maple syrup if you like. Sounds a lot like my favorite pancakes.
  6. Tangerine Dream: This Tangerine Breakfast Cookie recipe comes from my own blog. The citrus fruit gives the cookie even more of that wake-up, feel alive quality. I also cut down on the sweetener by adding applesauce to the mix, so the cookie is almost entirely sweetened by the fruits.
  7. Thumbprint: How about trying some flourless Thumbprint Breakfast Cookies? They’re vegan and gluten-free with just five simple ingredients. After mixing and baking the base, you’ll fill the top with jam and drizzle with nut butter.
  8. Oatmeal: Here’s a recipe your whole family can enjoy: Oatmeal Breakfast Cookies. The author cut the honey in the original recipe down by half. The coolest part is that you can easily double the batch and freeze them for quick breakfasts long after you’ve baked.
  9. Everything: You’ve heard of everything bagels. Now there are Everything Breakfast Cookies! This mix has the nutrition of banana, pumpkin puree, almond butter, coconut oil, agave nectar, pecans, cranberries, and much more.
  10. Brownie:Ah, yes. The Breakfast Brownie. An even more delightful treat than the standard cookie, this brownie is packed with fruit and whole grain goodness. I even think you could consider swapping out the cocoa powder for your favorite protein powder for some extra oomph.
